🤠’s easy Stir Fried Beef & Leek

You will need a packet of flank beef about 150g, 1 teaspoon of baking soda as tenderizer, 1 T Shaoxing wine, 1 T oyster sauce, 1 T dark soy sauce, pepper and sugar to taste, corn flour, two leeks (about RM5 from the supermarket), 1 thumb sized ginger, julienne, one small carrot, sliced lengthwise., one shallot, minced.

Step 1. Slice beef into strips. Sprinkle beef with banking soda. Add marinate ingredients. Add 1 T oil.

Step 2. Slice leeks, ginger and shallot. Heat oil in a wok to fry ginger and leeks until slighly charred. Remove to a bowl.

Step 3. Reheat wok with a little oil. Fry minced shallot and add the marinated beef. Stir fry for 2 min or until cooked. Tip: Do not fry the beef until hard and dry. Add corn starch in cold water as a thickener. Adjust salt and sugar if required.

Step 4. Add leeks and carrots. Serve immediately with a garnish of chopped spring onions.
