🤠’s easy Claypot Chicken

You will need a chicken wing or breast, 2 dried Shitake mushrooms, a Chinese liver or pork sausage.

Marinade: 1 teaspoon sesame oil, 1 T oyster sauce, 1 T light soy sauce, 1 T dark soy sauce, spring onions as a garnish, oil, sugar and pepper to taste.

Sauce : water, corn starch, 1 teaspoon dark soy sauce, sesame oil and sugar to taste. Optional: egg, salted fish

Step 1. Wash 1 cup rice in claypot. Throw away water used to wash rice. Add one and a quarter cup of water.

Step 2. Heat claypot on stove for 10 minutes. Prepare marinade and add chicken, mushrooms and sausage.

Step 3. Remove pot of claypot and add chicken, mushrooms and sausage and remaining marinade. Replace pot and turn heat down to cook a further 5 minutes

Step 4. Remove pot of claypot. Stir in sauce. Add spring onions as garnish. Serve immediately.
