🤠’s easy Bacon and Leek Quiche

You will need 4-5 bacon rashers, 3 eggs, cooking cream, two leeks (about RM5) , short crust pastry, 1 T ground black pepper, Parmesan cheese, grated to taste.

Step 1. If you are using frozen short crust pastry, take a sheet out to thaw at least 30 minutes before you start cooking. Line bottom of a quiche pan with parchment paper. Place short crust pastry to fit into pan. Bake for 15 minutes at 170C. Remove parchment paper.

Step 2. Chop leeks and fry in a skillet until slightly charred. Remove to a container. Fry bacon rashers cut in pieces until fat is rendered. In a bowl beat 3 large eggs. Add roughly ground black pepper. Add Parmesan cheese and bacon and fat.

Step 3. Place leeks into the pastry base. Add egg and bacon mixture to the top of the quiche pan. Add more Parmesan cheese on top to form a crust. Bake at 170C for 20 minutes or until done.
