🤠’s easy Steak Diane
You will need a 300g steak with marbling (it’s the fat that gives the steak its juicy beefy flavour) flattened with a meat mallet, 10 mini oyster mushrooms, sliced, a shallot, minced, a clove of garlic, minced, 3 T brandy, 2 T Worcestershire sauce, sugar and salt to taste, two knobs of butter, ground black pepper to taste.
Step 1. Sauté the mushrooms in a little oil and one knob of butter. Add minced garlic and shallots. Fry until mushrooms turn brown. Remove to a container. Flatten the steak with a meat mallet.
Step 2. Heat a cast iron skillet with a little oil. Add a knob of butter. Sear the steak on one side for 2 minutes until a crust appears. Then turn over, reduce heat and sear the other side for one and a half minutes. Remove steak to a heated oven to continue to cook.
Step 3. Deglace the skillet with brandy. Scrap off any bits of fat into the sauce. Add mushrooms and a knob of butter, and Worcestershire sauce.
Step 4. Remove steak from oven. Add any drippings to the sauce. Serve immediately with gratinated potatoes.
