🤠's easy Japanese omelette
Japanese omelette is easy to make. You don't need a square pan but it helps
You will need two eggs, 1 Teaspoon cooking wine or sake, 1 Teaspoon mirin, 1 teaspoon dashi powder (I use an anchovy dashi powder) and sugar to taste.
Step 1. Grease the pan with some paper towel soaked in oil. Heat at medium to high heat. Crack two eggs into a bowl. Add mirin, sake or cooking wine and dashi powder. Beat egg mixture with chopsticks.
Step 2. Pour 1/4 of egg mixture into pan. When slightly cooked, lift the end away from the handle and roll up the Omelette to the handle end. Oil the pan with the paper towel using chopsticks.
Step 3. Push Omelette to the other end. Add egg mixture. Lift the omelette so egg mixture gets underneath. Roll omelette to the handle end. Repeat one more time
