🤠’s easy Ayam Bakar
🤠's easy 4 step Ayam Bakar (fried chicken wrapped in banana leaves) recipe.
You will need 1 pack of chicken thighs or wings from the supermarket, about RM6-7, banana leaves (RM2), ayam bakar paste (RM1.50 per packet, sold in supermarkets), juice from a lime, Kaffir lime leaves as garnishing, a little oil.
1. Into a freezer bag, squeeze ayam bakar paste. Add chicken pieces. Add 1 T oil and lime juice. Julienne Kaffir lime leaves and add pieces into bag.
2. Zip up freezer bag and massage the marinade into chicken pieces. Leave in fridge for 30 minutes
3. Clean banana leaves under running water. Heat oven to toast Banana leaves till slightly charred. Heat wok with 4 T oil until smoke appears. Wrap chicken pieces in Banana leaves and secure ends with toothpicks.
4. Fry for 10 minutes with wok cover on, reducing heat after 3 minutes. Turn wrapped chicken after 5 minutes.
