🤠's easy Tom Kha Chicken with Maepranom paste

Another easy to whip up authentic Thai recipe using Maepranom cooking pastes - just add chicken, santan, fresh straw mushrooms (you can substitute straw mushrooms with button mushrooms) and aromatics (one stalk lemongrass, sliced diagonally, thumb sized galangal, sliced kafir lime leaves,, one onion, sliced) . Juice from one lime.

optional: 2 birds eye chillis for added spice.

Step 1. Chop or slice aromatics. Fry aromatics in a little oil until fragrant. Add a bowl of santan and Maepranom Tom Kra paste. Bring to boil.

Step 2. Wash chicken pieces in water. Add chicken pieces and mushrooms into saucepan. Add a bowl of water. Adjust for sweetness (add sugar) or sourness (add more lime juice).

Step Simmer on low heat for 10 minutes or until chicken is cooked. Serve with rice. Optional: garnish with cilantro (coriander leaves)
