🤠’s easy Assam Hei

🤠's easy 4 step Asam Hei (Prawns in tamarind sauce) recipe.

A simple recipe with only 3 ingredients : 12 XXL prawns, 2 T shaved Gula Melaka, tamarind juice plus 0.5- 1T dark soy sauce to taste.

1. Clean prawns, then snip half their heads off and remove tail spike. Devein prawns with shells intact,then set aside to drain

2. Make tamarind juice by adding 150ml boiling water to raw Tamarind pulp (about 1 inch piece). You can also use bottled Tamarind pulp- just dilute with water before use. Strain pulp through a tea strainer, discard pulp and retain juice

3.Into a freezer bag, add cooled Tamarind juice, Gula Melaka and dark soy sauce. Add prawns and massage marinade into prawns

4. Heat oil in walk till smoking. Add prawns and fry for 1 minute. Turn over and fry for another minute. In last 30 seconds add remaining marinade. Reduce to a sticky sauce, continue to fry for a further 30 seconds. Coat charred prawns evenly on both sides before removing from wok.
