Sweet Sour Pork (madebylaw recipe)

🤠's easy sweet and sour pork recipe (adapted from MadewithLau.com) in 4 steps. You will need two pieces of shoulder pork (with marbling), red, yellow, green peppers, 1 onion, 1 large tomato, pineapple, 1 thumb sized ginger piece. Sauce: 5T tomato ketchup,.1T vinegar, brown sugar to taste. Salt to taste. 2T corn flour. 100 ml water.

1. Cut pork shoulder pieces into bite sized pieces. Wash and pat dry. Place in freezer bag. Add 1 T light soy sauce. 1 T garlic salt. Half a beaten egg. Pepper to taste. Squeeze sliced ginger rto make 1 T ginger juice. Add to freezer bag. Massage marinade into pork.Leave it fridge for 30m.

2. Heat oil in sauce pan until smoking. Test with chopsticks. Add 2 T flour to pork. Massage with disposable glove to coat pork pieces. Add 3 T corn flour. Massage to coat pork pieces.

3. Add pork piece by piece into pan. Fry till golden brown in batches and drain on kitchen towels. Then fry a second time to achieve a crispy coat.

4. Heat wok with 2T oil. Add onions and slices of ginger. Fry till aromatic and onions are caramelized. Add peppers, tomatoes and pineapple. Fry for 2m. Add sauce and reduce heat, fry another 1-2 m until sauce thickens. Transfer to serving dish. Add pork pieces.
