🤠's Easy Spinach 3 Egg Soup

A staple of Cantonese style soups, Spinach Soup with 3 types of eggs (Century preserved duck egg, salted duck egg and chicken egg is easy to prepare. You will need :

A pound of Chinese spinach (about RM3), 4 Cloves of garlic, smashed, 2 slices of ginger, a ikan bills stock cube, 1 T goji berries and 3 tablespoons of ikan bilis as garnish.

Step 1. Bring 500 ml of water to boil in a saucepan and dissolve a stock cube of ikan bilis. Add ginger slices.

Step 2 Wash spinach leaves and set aside. Fry ikan bilis in a wok with a little oil until crispy. Set aside. Add garlic to the wok and fry till aromatic. Add spinach leaves and cover wok for one minute. Add stock and preserved egg and salted egg. Beat one chicken egg and stir into soup. Add goji berries. Cover wok and cook for 3 minutes on medium heat.

Step 3. Serve soup topped with fried crispy ikan bilis.
