🤠’s Easy Pork Rib Coconut Soup

Double boiled pork rib coconut soup is a classic Cantonese soup that takes hours to steam. But with a pressure cooker, cooking time takes just 20 minutes.

You will need : 4 meaty pork ribs about 250 -300 g, about RM24 from the butcher, white fungus, soaked in lukewarm water for 10 minutes , 6 red dates, 1 T goji berries, 2 slices of ginger, 5 peppercorns, salt to taste. Optional : Lycees , dried fig.

Step 1. Boil a saucepan of water. Add ginger slices and peppercorns and pork ribs. Boil for 15 min on low heat. Skim off scum and rinse pork ribs.

Step 2. Add coconut water to pressure cooker. Scrap coconut flesh and add to pressure cooker. Add pork ribs, fungus, goji berries, red dates and optional dried fig, Top with more water to cover ribs.

Step 3. Set pressure cooker for 20 minutes using the setting for chicken. When done, add optional lycees. Garnish with optional coriander leaves.
