🤠's easy Smashed Avocado Toast

You will need 4 slices of baguette (or white bloomer loaf), one ripe avocado, paprika or red pepper to taste, 2 eggs, butter and salt to taste, milk, 4 thick slices of good quality chorizo.

Garnishing: rocket leaves

Step 1. Scramble two eggs with milk in a sauce pan. Add 1 knob of butter for flavour. Remove.

Step 2. Brown chorizo slices in a little oil on both sides until cooked. Remove. Soak bread in juices and oil.

Step 3. Toast baguette. Smash avocado with fork and spoon over toasted baguette slices. Sprinkle paprika in top and serve immediately. Optional: garnish with rocket leaves
