🤠’s easy Sweet Sour Deep Fried Garoupa
🤠's easy 4 step Sweet & Sour Fish. You will need a 700g-1kg fish, preferably unfrozen. I used a frozen Garoupa (about RM 49 from Lotus supermarket). Sauce : 5T tomato ketchup, 1T Worcester sauce, 1T balsamic vinegar, sugar to taste. Mix 2T corn flour with 250ml cold water.
Garnishing: 1 medium onion. I red pepper. 1 big tomato. 3 dried shitake mushrooms.
1. Gut and scale fish. Pat dry with towel. Coat fish with mix of corn and rice flour in 2:1 proportion. No need to add salt.
2. . Fry 2 cloves garlic , minced and a thumb sized ginger, julienned into strips with 3T oil till fragrant. Add sauce, corn starch and garnishing. Fry another 5m.
3. Heat oil in wok till hot. Stick chopsticks in oil until bubbles appear. Fry fish 5m one side. Reduce heat. Turn and fry another 5m. Drain on chopsticks over a bowl.
4. Spoon sauce and garnishing on fish just before serving. Add coriander leaves as extra garnishing. Serve with rice.
