🤠's easy Garlic Prawns in Brandy

You will need:

12-16 XXL prawns, deveined but with shells intact.

Garnishing: curry leaves

Sauce: 4 cloves garlic, chopped, dried tomato, Schezuan pepper salt, garlic pepper, 1 teaspoon chilli flakes, smoked red paprika, olive oil

Step 1 Clean and devein the prawns, leaving shells intact. Chop garlic cloves roughly. Dry fry curry leaves until aromatic. Tip: no need to add oil.

Step 2 Remove and set aside curry leaves. Add 1 T oil , a knob of butter and fry the garlic until the pieces turn brown. Add prawns, garlic pepper, dried tomatoes, paprika, sugar and fry for one minute before turning prawns. In last minute, add the brandy and half of the curry leaves. Reduce heat to evaporate off Brandy. Add Schezuan pepper salt to taste.

Step 3. Serve immediately with remaining curry leaves.
