🤠’s easy Lotus Root Pork Rib Soup

You will need a packet of pork ribs ( I got my mine from Lotus supermarket at Tanjung Tokong for RM12), a cleaned lotus root, sliced in 1 cm thick chunks (about RM6), peanuts, and a slice of dried cuttlefish, grilled then cut into strips.

Step 1 Wash pork ribs to remove any bone fragments. Blanch for 30 minutes in boiling water in a pressure cooker pot. Soak a handful of peanuts in a cup of boiling water. Pour away water from pressure cooker pot after 30 minutes.

Step 2 Add lotus root slices to pot. Toast a dried piece of cuttlefish for 2 minutes, then cut into strips. Add to pot. Add peanuts.

Step 3. Cook for 30 minutes in the pressure cooker. Let steam out naturally through the valve, about 15-20 minutes. Add salt to taste.
