🤠's easy Mushroom Meatballs
You will need 350g of minced pork, 3 medium dried Shitake mushroom ms, soaked in hot water, 4 shallots, minced, 1 T light soy sauce, 1 teaspoon sesame oil, pepper to taste, breadcrumbs to coat meat balls (I used homemade breadcrumbs made from toasted wholemeal bread), caramel colouring, 1 T corn flour, 1 egg yolk. Optional: 1 stalk spring onion, cashew nuts for topping meatballs, sesame seeds for topping meatballs
Step 1. Chop onion and mushrooms into pieces. Add 1 T water, sesame oil, caramel colouring and spring onion (if required). Blend into fine paste.
Step 2. Mix minced pork with above mushroom and shallot paste in a ziplock bag. Add egg yolk, corn flour, soy sauce. Massage everything in Ziplock bag. Leave overnight in fridge.
Step 3 Head oven to 250C. Brush oil on aluminium foil. Using disposable gloves, take out minced pork and shape into balls. Coat with breadcrumbs then place meatballs on foil
Step 4. Grill in oven for 20-30 minutes at 175C till meatballs turn brown. Leave to cool then store in ziplock bag for making spaghetti meatballs
