🤠's easy Meatballs & Peas

You will need about 250g of minced pork, egg yolk, 1 T corn flour, salt and pepper to taste, 1 teaspoon light soy sauce, 1 teaspoon caramel colouring, 1 teaspoon oyster sauce, breadcrumbs to coat meatballs. Optional : 1 teaspoon Shaoxing wine.

Garnishing: a can of processed peas, a onion, chopped finely, two bacon rashers, corn flour and chicken stock, 1 T caramel colouring , 1 T Worcester sauce, 1 teaspoon sugar, salt and pepper to taste

Step 1. Mix minced pork, egg yolk and marinade ingredients into a ziplock bag. Leave for 30 minutes. Using disposable gloves, shape meatballs. Coat meatballs with breadcrumbs - I use homemade breadcrumbs made from toasted wholemeal bread.

Step 2. Heat oven at 250C for 5 min on fan assist setting. Brush oil on a roasting grill to prevent meatballs from sticking. Place meatballs on grill at lowest part of oven. Reduce temperature to 170C and grill for 20 minutes or till meat balls are cooked

Step 3. Heat wok. When hot, fry bacon rashers. No need to add oil. When enough bacon fat has been rendered in wok, add chopped onion and fry till aromatic. Add chicken stock (or water), caramel colouring, salt and pepper to taste. Add peas. Add corn flour in cold water as thickener.

Step 4. Arrange meat balls on serving plate. Pour garnishing on top and serve immediately.

The recipe is adapted from my Mum's by adding breadcrumbs and bacon rashers
