🤠’s Easy Sea Bass In Ginger & Soy Sauce

A classic Thai recipe for Siakap (sea bass) with just ginger, scallions and fried onions in soy sauce, this dish is not only cheap but easy to prepare.

You will need :

A 600-700 g Siakap from the supermarket (about RM13). Sauce: a bowl of ginger, cut into thin strips, fried onions (3 T), sugar to taste, 4 stalks of spring onions, choppped and oil for frying.

Step 1. Wash and gut the fish. Score two vertical slits on each side. Pat dry with a kitchen cloth. Season with salt. Coat fish with corn flour making sure the flour gets into the slits and inside the fish

Step 2. Heat oil for deep frying in a wok. When oil is smoking, deep fry the fish for 9-10 minutes, turning once. Remove to cool over a rack.

Step 3. Deep fry 90% of the ginger strips until crispy, about 3 minutes on medium heat. Remove to drain over kitchen paper. Decant oil into a storage container, leaving 2 T of oil in wok.

Step 4. Fry spring onions, remaining ginger and fried onions till aromatic . Add 200 ml water, 2 T light soy sauce and sugar to taste. Pour hot sauce over fish in a serving plate. Sprinkle ginger strips and extra fried onions on top,
